Fox Valley Science Society: The Science of Fermentation
Fox Valley Science Society welcomes curious minds for an open discussion exploring the science of fermentation. Learn how microorganisms transform everyday ingredients, why fermentation has been used by cultures around the world for thousands of years, and how biology and chemistry work together to create everything from food and beverages to some surprisingly unexpected products.
Speaker Bio:
David J. Krause, Ph.D. is an Assistant Professor of Biology at the University of Wisconsin–Oshkosh specializing in microbiology. His research explores the remarkable metabolic diversity of budding yeasts, including how different species have evolved the ability to grow without oxygen. His lab uses genetics, genomics, and experimental evolution to better understand the biology and evolution of yeast—tiny organisms responsible for some very important science, including fermentation.
